MUMBAI FAMOUS VADA PAV Ingredients : PAV buns 6 , batata vada 6 , green chutney , tamarind chutney , dry garlic chutney Ingredients for batata vada : boiled potatoes 3-4 , coriander chopped 2 tbsp , green chillies 2-3 slightly crushed , ginger grated 1/2 tsp , garlic 2-3 flakes grated , lemon juice 2 tsp , sugar a big pinch, salt to taste, garam masala 1/4 tsp. Ingredients for tempering: oil 1/2 tsp, rai 1/2 tsp, hing a pinch, haldi 1/4 tsp, red chilly powder 1/4 tsp, curry leaves 6-7 Ingredients for batter: besan 1/2 cup, rice flour 1 tbsp, haldi 1/4 tsp, red chilly powder 1/4 tsp, salt to taste, water to make batter. Method: Make a coarse paste with the ingredients for batata vada and mix with the potatoes and dhania leaves. Heat oil in a pan and add all the tempering ingredients. Pour this all over the prepared potato mixture. Mix well and make balls. Prepare the batter mixture by mixing all the ingredients together. Dip the potato balls in this batter and fry till golden brown. Dry garlic chutney: Dry roast 1 cup dry dry shredded coconut, 3-4 dry red chilies, 2 tsp sesame seed in a pan for a few seconds till fragrant. Remove from pan and cool it. Blend in a mixer with 10 flakes of garlic, 1 tsp tamarind and salt to taste. Don not over blend. Remove to a bowl and use as required. Assembling of vada pav: Slice the PAV buns. Spread green chutney on one side and red on the other side , sprinkle little garlic chutney . Place the batata vada in the middle and serve with tamarind chutney. Enjoy 😊😊😊
