MY Baked Caramel Custard by Tiffany B Casey . By Tiffany B Casey on Saturday, August 2, 2014 at 6:36pm 1/2 stick unsalted butter, melted 8 eggs 1/2 cup sugar 1 can Sweetened Condensed Milk 1 cup heavy Cream nutmeg (optional) Add 1 cup of sugar and 3 tbsp of water and make a medium dark caramel by heating on medium high and stirring constantly untill caramel is achieved about 15-20 minutes. In a blender combine eggs and sugar; add melted butter; blend for 10 seconds. Add condensed milk and cream and blend 10 more seconds. Pour into individual or single pan containing caramel sauce. Sprinkle with nutmeg if desired. Pour 1 inch of water into a Pyrex dish. Insert pan with custard and bake at 350 for about 30 -60 minutes depending on size of custard pan(s) or until a knife can be inserted into custard and come out clean. DO NOT OVERBAKE. Allow to cool completely for at least 4 hours.
