Macaroni cheese (well, Penne cheese) the old-fashioned way. Build a white roux: Melt butter in a pot, add flour until it forms a firm dough, SLOWLY add milk, a drip at a time, stirring well each time, until it becomes first a fluffy dough and then a good sauce. Then I added grated mature Cheddar, salt, pepper, soy sauce, mustard and a tiny bit of marmite. Pour over the cooked pasta, top with breadcrumbs and grated cheese, bake until crispy on the top.
