Made Teochew style fried kway Teow with chye poh for dinner tonight. For the Chye Poh, I made a special version by frying chopped garlic, shallots, hae bee, dried scallops and pork lard in oil till its caramelized and fragrant. Then the kway teow was fried first and tossed till it is almost ready. Dash of fish sauce and eggs were added followed by the bean sprouts and chopped chye sim. Sprinkle of sugar to balance the saltiness. I used two packets of chye poh, one salty, one sweet and I still have a jar of prepared chye poh left which I will store in the fridge for future use. It will be great with egg tofo or even fried cod fish.
