Made a fresh bath of Shoppe made Summer Sausage. Turned out real good. Also, made a batch of Texas style Hot links. They also turned out well. Where are all the packing houses? When I first started working with meat, a little over 36 years ago, there were a half-dozen packing houses here in central Arkansas. Today there is not a one in central Arkansas. I only know of one packing house in the whole state, Morrilton Packing.
