Made a really nice high-gluten bread today. The dough was really elastic and kneaded like in the old days - not that paste that you make with all purpose flour. The loaves rose beautifully and baked up with a crisp, lustrous, flavorful crust. The crumb was firm but moist. It was wonderful with olive oil and a little salt and balsamic vinegar or with butter. I prefer the former with red wine and the latter with dinner. It is said that "good bread eats good." This was good bread.
