Made a triple batch of this Chicken Rice-a-Roni Casserole to be served at a funeral luncheon today. Very easy dish to put together and very tasty! I used a large package of chicken breasts, cooking them in the crock pot yesterday while I put together a couple of desserts. I assembled the casserole (minus the onion rings) last night and refrigerated. This morning I added the French Fried Onion rings and baked.
