Made a true pisnyi borshch for the first time--no meat or meat-based bouillon. I used mushroom base (Better than Bouillon brand) and my momf favorite, Vegeta. They made a nice broth. I added carrots, potatoes, cabbage (slaw mix, pre-cut), peppers, diced tomatoes, a big handful of dried bili rhyby (poricini mushrooms from the Karpaty), fried onions and, at the very end, canned and pickled beets. (Did you know you can buy canned shoestring beets? Nice!). I found I needed a bit more tomato taste, so some tomato paste went in. Bay leaves, garlic, dill, parsley and hot peppers seeds were the only spices I added. As you can see, our family does not do clear borshch or vushka. Turned out pretty good, which is fortunate, as I will be eating this for some time......
