Made great appetizers tonight with poblano & bell peppers from our garden. (35) I cut flaps open cleaned out the seeds then stuffed them with one third of a wedge of laughing cow cheese, mixture of Spanish rice and taco meat then sealed it with the flap I cut and wrapped it with a half slice of Butterball turkey bacon secured with a toothpick. Sprayed a cookie sheet and placed them separated on the cookie sheet baked at 400 degrees for 40 minutes. Yum! We also had chalupas, burritos, Spanish rice, beans, guacamole and hot sauce. Lou decided he will keep me a little longer!
