Made this today. One of our faves. WHITE BEAN CHICKEN CHILI 1 med onion chopped 1 tbl evoo 2 garlic cloves crushed 6 small or 4 lrg boneless skinless chicken breast 2 tsp grand cumin 1 tsp chili powder 1 tsp blk pepper 1 tsp dried oregano 5 cans cannellini beans (or other varieties white beans) 2 small cans low sodium chick broth 2 small cans chopped green chiles 1 cup frozen yellow corn Cube chicken into vote size pieces. Place into large skillet with evoo over med high heat. Stir to cook evenly. Add onion, garlic and spices. Cook until chicken turns white and onions are clear. Leave on low. In your blender or food processor, purée 3 cans of beans, one at a time, with just enough broth to come to top of beans. Pour into crock pot. Add cooked chicken, onions and liquid from pan. Stir in 2 remaining cans of drained beans, corn and the 2 cans of chiles. Cook on high for 6 hrs. Salt to taste. Serve with tortilla chips, shredded cheese, sour cream and or chopped avocado. A crisp salad and rustic bread also good sides. NOTE: to thicken chili vent lid for last hour of cooking. If it is too thick for you add more broth. For a hotter flavor add some red pepper flakes to your spices. Enjoy!
