Maeves adventures in the kitchen: Even when a little under the weather she begged me to let her cook tonight (hence the jammies and I sure hope that entthusiasm lasts!) Tonight she chose Spaghetti with home made sauce and Jumbo parm meatballs with sliced cucumber and dressing for the side. I let her do a little slicing tonight of the cucumber. Her only nemesis seems to be the electric can opener, it gives her a hard time. She wants to try a meatball with kalamata olives at a later date. Her recipes follow: - Sauce: One 29 oz can of tomato sauce, one 29 oz can of diced tomatoes and one 18 oz can of tomato paste. To that she added 1 tbs oregano, 2 tsp sugar, 2 tsp garlic powder and 2 tsp onion powder, 2 large bay leaves.(there was quite a discussion of if to add the bay leaves or not. She decided to go ahead after I promised I would remove them before serving because I always forget.). cover and bring to a boil on high and lower to a simmer for 30 minutes stirring occasionally. ( I did the stirring, the tomato sauce tends to send a hot splatter) Serve on top of spaghetti cooked according to the directions and you can put some on the meatballs. Meat balls: 1lb ground beef, 1 egg, 1 cup bread crumbs, 1/2 cup parm. Mush it all together (best tool are your hands here and this is where we practice meat safety and extra hand washing) Divide mixture into 8 portions, roll into balls, place on lined cookies sheet and bake at 350 degrees for 30 minutes. She decided after there should be a little sauce in the meatballs. They were good as they were I thought.
