Follow or friend me for more amazing recipes Anna Grace Marie facebook/aalaes For more great recipes join our awesome FREE RECIPE GROUP click on-> https://facebook/groups/GreatRecipesandMore/ ********************************************************************************************************************************************************************************************Meatloaf Cupcakes with Mashed Potatoes (Photo & Recipe by Marilyn C.) 1 lb. ground beef, extra lean 1/2 lb. bulk sweet Italian sausage 1 c. breadcrumbs, seasoned 1 c. carrots, shredded 1 c. tomato pasta sauce 1/2 c. water 2 Eggs 1/2 c. onion, finely chopped 1 tsp. garlic, fresh & minced 1 tsp. dried oregano leaves 1/2 tsp. salt 1/2 tsp. black pepper 6 slices deli cheddar cheese Potato Topping: 1 1/4 c. water 6 slices deli cheddar cheese, quartered 2 c. mashed potatoes whipped with butter and milk 1/2 tsp. salt & pepper, to taste Preheat oven to 450 degrees. Using cooking spray, coat a 12 cup muffin pan. In a large bowl, combine all ingredients for meatloaf except for the cheese slices; mix well. Cut each slice of cheese in 4 strips. Now cut across into thirds to make 12 small squares of cheese. Take approx. 1/3 cup of meatloaf mixture and roll into 12 (2 1/2-inch) balls. With the end of a wooden spoon, make a hole into each ball. Divide pieces of cheese into 12 even stacks and press 1 stack cheese into center of each ball & covering evenly with meat mixture so cheese is pressed down in center. Place stuffed meatloaf mixture into muffin cups. Bake 20-25 minutes or until meat is no longer pink. While meatloaf is baking, combine left over mashed potatoes and 6 quarters of cheese & cook over medium-high heat until the cheese is melted. When meatloaf is done, top each cupcake with about 3 tablespoons potato mixture over each meatloaf; sprinkle with paprika, if desired.
