Make your own healthy cheese! I do love raw cow/sheep/goat cheese as it is full of wonderful protein for the body - in moderation. However, I love making fermented non dairy Cheese with cashews too! Not kidding- I just saw this in PCC for $8- a container. It did have some preservatives ofcourse...so why not make your own with NO preservatives and its cheaper! You will need: 2 cups raw cashews soaked for 4 hours, 1/4 cup fresh squeezed lemon juice, 1 cup unsweetened almond milk, 3 probiotic capsules, 3 tbsp nutritional yeast, herbs and sea salt/pepper to taste, 1 tbsp coconut oil at room temp. Directions: drain and rinse cashews, place in food processor with almond milk, lemon juice and probiotics. Blend until smooth. Pour into a cheese /nut bag and place into a colander. Wrap it up and place colander in a medium bowl. Set a 5 pound weight on it (large mason jar full of water) and place in a warm dark area for 24 hours to ferment. Once fermented, take the cheese out of the bag and place in bowl. Mix in nutritional yeast and other herbs/ spices of choice and coconut oil. Put into a cheese mold and set it in the fridge overnight. It will become firm and will stay fresh for around a week when stored in the fridge! This cheese gets better each day and gets tangier! It is wonderful as a spread, dip for veggies, great as a pizza base, on paleo crackers... you name it. I have mixed blueberries with this recipe to make a sweeter spread that is wonderful when paired with dark chocolate and a little red wine . :-) Enjoy!
