Making risotto is one of my favorite things. This last part is the most crucial: its called mantecatura when you take the pan off the heat and you add the final touches as cheese, butter and herbs. I like to also add a touch of vinegar just at the end to brighten up the flavors. You can see the onda - the wave, I am making in the first picture that helps the all dish to get creamier. The second picture is the final result: Mixed mushrooms, fontina cheese risotto with crispy Speck. BUON APPETITO!!!
