Making use of a beautiful Thursday at home and waiting on rim repair place to call! The sunlight and weather makes me think perfection, light and joyful. So naturally I think of citrus! A Harris Teeter trip later, I was prepping a boneless, skinless, chicken thigh, marinated in sea salt & black pepper, cilantro, evoo, lime, lime and Valencia orange zest. Then stuffed it with pineapple cream cheese fortified with a trifecta of citrus zest, mandarin marmalade, fresh cilantro, pink sea salt and plain panko bread crumbs. At this point the southern bastard in me contemplated adding the ultimate pleasure in southern ingredients....Yeah, lets roll it in cherry wood thick cut bacon!! And so it was done. Cant wait to bake them off at 420° on a broiler pan and crisp that bacon up! Gonna side them with lime/garlic sauteed kale and still figuring out a starch! I woulda made somebody a great housewife!! Guess Im stuck with being a #HouseHubby & #DomesticDad
