Making use of the nice weather to build the girls a playhouse. (Um, Mom may move in there;) Now, Daddy/daughter crew is hungry! Ten minutes to put together an easy leftover Turkey, Wild Rice and Roasted Cranberry Bake. Quite frankly, the loveliest casserole Ive ever come across! What I did: 2-3 cups cooked leftover rice* 2 cups diced cooked turkey (I like a mix of white and dark meat.) 2.5 cups fresh spinach, roughly chopped (leaves packed together) 2 Tbsps butter 1 tsp salt-free seasoning blend (Mrs. Dash table blend is good.) 1/2 tsp salt (Or to taste) 1/2 medium yellow onion, minced 2 Tbsps flour 1 cup chicken or turkey stock 1/4 cup Greek yogurt (I used Fage Greek yogurt) or sour cream 1/4 cup parmesan cheese, finely grated *I used 2-3 cups wild rice with roasted cranberries that I had left over from Thanksgiving meal. You could easily use the equivalent with an easy plain cooked white rice or wild rice. (If you want to prepare Wild Rice and Cranberries from scratch: Take 1 cup wild rice, 1 tbsp butter and 2 1/4 cups chicken broth and bring to boil. Reduce heat and simmer 30-35 minutes. Roasted Cranberries: (Bon Appetite) Toss 1 cups cranberries with 1 tsp. olive oil, 1 tsp. chopped fresh thyme, and 1/2 Tbsp. sugar. Roast in a 400 degree oven until softened and slightly caramelized, about 15 minutes. Mix rice and can berries together) To Prepare: Preheat oven to 450F Melt butter in a 3 quart saucepan over medium heat. When the butter foams, add the 1/2 teaspoon of salt, salt-free seasoning, and minced onion. Sweat the onions for a good 5 minutes or until they become translucent and start to get soft, all the while giving em a stir from time time. Add flour and stir until integrated. Cook for another 1-2 minutes just to get the raw out of the flour, then whisk in the stock. Heat until just simmering over medium heat, then stir in chopped spinach, Greek Yogurt or sour cream and diced turkey. Stir the cooked rice into the turkey-spinach-sauce mixture, pour into a 13x9 inch baking dish. (Should be lightly greased with cooking spray. Oops, forgot to do that. No biggie) Sprinkle on grated cheese. Bake uncovered for 15 minutes. Then broil for 2 minutes on high (watch it doesnt burn!) Then let rest another 10 minutes before serving.
