Manitoba Morel Mushroom Soup Ingredients: 1 onion, diced 2 medium carrots, diced 1 1/2 lbs (685 g) ground farmer sausage 1 lb (455 g) morel mushrooms, julienned 3 portobella mushrooms, thinly sliced 1 cup (250 ml) white wine 4 cups (1 L) chicken stock salt & pepper to taste 2 cups (500 ml) whipping cream 1/4 cup (60 ml) parsley, chopped Directions: 1. Saute the onions, carrots & sausage in a large skillet. Add the mushrooms & saute until they are well cooked. 2. Deglaze the pan with the white wine. Then, add the chicken stock. Bring to a boil, then turn down the heat to a simmer. Add the cream & let the mixture simmer. 3. Season the soup with salt & pepper, adjusting to taste. Garnish each serving with the parsley. Serves 4
