Many of my savoury recipes start with roasted tomatoes. cut off the top, drizzle with olive oil (not necessary if you dont want but adds a lovely flavour if you do) and put in a medium oven for around 3 hours. The result is an intense flavour that stores in the fridge for around a week (much much longer if you completely cover with oil - plus the oil is fabulous to use in cooking) and great for soups, salads, pasta, and to add further depth of flavour to loads of different dishes.
