Marcella Hazan enormously influenced me as a cook. Her Essential Italian cookbooks were among the first cookbooks that I ever bought -- secondhand at the great Strand Bookstore in New York City. The bindings on those books are worn with age, the pages are now falling out and are splattered with spills, evidence that they have been read and referred to in my kitchen for many years. Marcella taught me how to make risotto. Her legendary four ingredient tomato sauce (tomatoes, butter, onion, salt) is perfection and is a dish that I make at least once a month. I love the simplicity and clear prose of her recipes and her unwavering belief that you do not need to do much to great ingredients to create delicious food.
