Matar paneer by Muslimah Jahan . plz ask questions at my page Maa Ke Haath Ka Khana Kitna Suhana Tha Woh Zamana This is made in 2 ways,one recipe is suitable fr everyday use n a slight alteration in the recipe makes it suitable n richer fr dawaths/parties etc. INGS....(regular recipe) Oil or butter 3 tbsps ginger paste 1 tsp garlic paste 1 tsp ground onion 1/2 cup chopped onion 1 small red chilli pwdr 1 tsp or more zeera/cumin pwdr 1/2 tsp garam masala pwdr 1/4 tsp( I use everest fr veg gravies,u can use home made too) kasuri methi(dried fenugreek) 1 tsp tomato puree 2 cups(grind tomatoes to a fine puree n strain,discard seeds n peel or use readymade) salt to taste ketchup 1/2 tsp or more if u like a sweetish taste milk 1/2 cup boiled peas 1 cup paneer cut in cubes cornflour 1 tsp mixed in 2tbsps water. method.... heat butter/oil.add cut onions,when they r soft add the onion paste n ginger garlic paste,stir n cook fr a minute.add zeera,chili pwdr n kasuri methi,stir fry n add 1/2 cup of water.cook fr a full minute on med flame but dont let it burn.add tomatoe puree n salt.cook on sim till the raw smell of tomato goes n little oil cms on top.add milk n cook fr a few seconds.add the paneer cubes n boiled peas.cook fr a minute on slow or till paneer is ready to eat.dont overcook paneer or it bcms like rubber.add the cornflour dissolved in water n keep stirring on medium high flame till u get a thick gravy of desired consistency.serve with naans or kulchas. TO make the same gravy richer add 1/2 cup fresh cream n 2 tbsps of cashew pwdr bfr adding paneer n peas.lastly put a spoon of melted butter on top bfr serving.
