Mauritian Bread in batter (Beignet de pain/Pain frit) This is traditional street food in Mauritius. I love this however it can be quite oily, so I use stale baguette instead as is it absorbs less oil and is crunchy... Traditional du pin frire does not require gram flour, however the blend gives it a light nutty taste Ingredients • 5 bread slices (can use either white or whole wheat bread) I used stale baguette • 1 cup gram flour (besan) (optional) • 2 cups all purpose flour • 1/2 teaspoon bicarbonate • 1/2 teaspoon orange food color • 1/4 teaspoon garlic paste • 1/4 teaspoon ginger paste • 1 tablespoon finely chopped spring onion • 1 tablespoon finely chopped coriander leaves (I used parsley) • Salt to taste • Water • Oil for deep frying Instructions 1. In a large bowl, combine gram flour, all purpose flour, bicarbonate, food color, garlic and ginger paste, spring onion, coriander leaves, salt(to taste) and gradually add water to form a thick batter 2. Cut the bread slices according to desired size 3. Heat oil in a frying pan 4. Take one slice of bread, dip in the batter and put in the frying pan 5. Repeat the process for all the bread slices 6. Cook on medium heat, by flipping to the other side 7. Cook until both sides turn to a light brown color 8. Remove and drain on kitchen towel paper 9. Serve hot with coriander chutney, tomato chutney or chili sauce I ,made the batter the night before
