Me and my bulldog was sittin at the kitchen table eating a bowl of pinto beans and fried cornbread when there was a light tapping at the back door. It was my old pard the Roadrunner, and with him was one of my oldest friends, the Terrapin. They both said that they would be glad to join us for dinner. We hadnt seen the Terrapin in many moons. He was a rare breed known as the traveling terrapin and cover a lot of ground in a short time. And never call him a turtle, he becomes right surly, and I saw him bite a feller once for that offence. I dont know how old he is but I first met him when I was a little boy. He had rolled down a hill and was stuck on his back. I noticed that he had a Spanish cattle brand carved into his shell. He also told me that he had 403 wives scattered across Texas, and didnt know how many kids and grandkids and great grandkids. We finished our beans and cornbread and the Roadrunner commented that the beans were cooked just the way he liked them.....Well now......he should...Ive been using his recipe for the last thirty years. The four of us then settled in to a strange game of checkers thats played with your eyes shut, no board, and gingersnaps are used as playing pieces....There are never any losers. The Roadrunners Recipe 2 pounds of pinto beans, soaked overnite, then rinsed 1 large onion 1 large jalapeno pepper 6 slices of bacon, partially fried 1 teaspoon of comino (also known as cumin to Americans) a couple of twists of black pepper In a large pot add water until beans are covered about two inches over ( if you have to add water during cooking use hot water boil low and slow, all day is better add salt to taste ONLY after they are completely done or they will be tough
