Meat pie I am one person that does not bake and my mother as a retired chef always tells me a chef must bake at least one thing. Well I got my none conventional rum cake and I wanted to try my hands on meat pie again, so I went reseaching. I tried all the Nigerian food blogs one could think of then I said to myself hmmm abeg do your own. I tried the first one which is picture 1 and the crust came out a little dry. I had some of the filling left so I tried it again but this time with more butter and it came out screaming fabulousity😙 So here is my recipe; for the crust I started with: 3 cups of all purpose pre sifted flour (you may sift if not) 1 1/2sticks if salted butter. Where one stick equals half of a cup(I noticed my butter had salt in it by the time I got home so I didnt use the pinch of salt. If using unsalted butter, then use a pinch of salt.) A sprinkle of freshly grated nut meg a cup of cold water(you may do half and half with cold evaporated milk) 1-2eggs(for egg wash) For the filling i used ground beef chopped bell peppers one chili pepper carrots and peas salt One whole Knorr or any seasoning cube you have. Curry Thyme I didnt have potatoes so I used bell peppers. 1-2tbsps of flour and some warm water For the crust Mix all your dry ingredients until your butter is finely in cooperated with the flour and it looks kind of grainy. Then in very small increments pour in your water and or milk(becareful so as to not have too much liquid in the mixture) Gently knead until the flour has formed into a ball) then wrap in cling wrap and refrigerate. (At this point I went about my chores, I even went out for a few hours and returned. The longer your dough sits, the better) For your filling Chop all your ingredients (remove all seeds from the peppers) In a sauce pan sauté your ground beef and drain off any excess oil and set aside. Heat some oil sauté your onions your bell peppers (at this point you may add your potatoes if using any. I like to pre boil/ blanch it in hot water before using it) Add your peppers, season with salt and stir for a minute to three minutes; then add your ground beef along with curry, thyme and knorr. Then pour in some water just to the level of your mixture and cook for about 3-6minutes. Meanwhile, mix your flour with little warm water to make a slightly thick paste; then pour into the pot and stir. Check for seasonings and keep cooking on low heat for another 5-10minutes; depending on how thick you want it then stir and set aside sprinkle some flour onto a clean and flat surface and roll until flat; then cut out the shape you would prefer. Rub some of the egg wash on the area of closure add your meat on to the middle of the crust and close also using a spoon or the side or the edge of your thumb or fork for design and closure Repeat, until you have used up all the dough Meanwhile preheat oven to 250degrees. Slightly grease the oven pan you are going to be baking with. Arrange the meat pie on to the pan and brush with the egg and bake for about 20-30minutes you may inctease the heat to 275 but becareful as not to burn the pies. You may also brush with egg wash half time into the pies baking Serve warm with a nice cool drink #DineExqusitelyAfrican #ChefNma #ExquisitelyGolden
