*Meatballs over stuffing.* A little time consuming but yummy! About two packs of hamburger meat. I seasoned it with cooked mushrooms, parsley, onions, salt, pepper and chicken rub seasoning. Roll them into small balls. Put aside. In a large baking pan (You will want to spray with non-stick or cover bottom with foil) poor two cans of chicken broth then add stuffing mix and a can of corn (drain your corn) until it is all soaked up and really dry. Put the meatballs on top and leave uncovered. Place in oven at 350 for about 30 minutes. Once you take it out, if it is runny from the fat cooking out (I stirred everything together and added more stuffing until it was not runny anymore. That stuffing soaked up all the fat.) PICTURES BELOW ------------------------------------------------------------------------------------------ *Pan fried Sweet Potatoes* Very easy and yummy Cut raw sweet potatoes into tiny cubes. Soak them in water twice and drain. (you want to wash most of the starch out before cooking) Let them dry on a towel. I used a medium frying pan and coated the bottom with vegetable oil. I seasoned my oil with Brown cane sugar, cinnamon, salt, pepper, and a tad bit of chili pepper. Do not get your grease to hot, keep it on a lower temperature. Stir in the sweet potatoes and cover with a lid. Stir periodically until the sweet potatoes get soft. Then you can raise the temperature and leave the lid off to get them crispy on the edges if you like! If you cook them on high too fast they will burn on the outside and not cook well in the inside, PICTURES BELOW
