Mexican fruit cake No its not like a fruit cake people make for the holidays lol Its awesome must try it!!!! 1- 20 oz can crushed pineapple 2- cups flour 1- cup chopped nuts (pecans) 2- tsps baking soda 2- cups sugar 2-eggs slightly beaten Mix well all together with with a wooden spoon and pour into 13x9 at 350 for 40-45 min Frosting 1- 8oz cream cheese 2- cups powdered sugar 1- stick butter melted 1- tsp vanilla Mix together with a hand held mixer until there are no lumps Spread on hot cake out of oven after about five min I saved few chopped nuts to sprinkle on top of finished cake
