Michael Ven De Elzens Recipe of the Week Labour day is a great day to catch up with friends and family, While up north hopefully enjoying some rays and bit of biking? Ill be making one of the Van de Elzens favorite dishes for Sunday night dinner. Cheesecake! This cheesecake is a simplified recipe my Fast cookbook and is fantastic as its uses almond milk to the replace the heavy cream. Resulting in a cheesecake thats slightly lighter on the belt but with a wonderful silk nutty flavor. Cheese cake filling 250 gm cream cheese 200 ml almond milk 3 Tbsp cold water 1 tsp gelatine 4 Tbsp caster sugar 1 tsp vanilla paste zest of 1 lemon Cheesecake base 1 pkt digestives, crushed 100 gm butter 2 Tbsp honey Line a 23 cm tin with greaseproof and press in the biscuits. Place in the fridge until cold. Place the cream cheese, almond, milk and water into a saucepan. Sprinkle over the gelatin and stir until well combined. Add sugar, vanilla paste and lemon zest. Cook over a low heat, until mixture begins to boil, remove and gently stir. Pour over biscuit base and set in the fridge for 1 hour. Topping Serve with peeled and sliced citrus like, oranges, grapefruit and blood orange! Drizzle with a little runny honey YUM
