Mid-American Review (which has been kind enough to publish some of my work) is celebrating its 35th anniversary by inviting recipes from literary types, to be reproduced on bookmarks. I offered the following (Deb Davis Francola, I think I slung a pan of this for you and Thom Francola when you visited our impoverished-student-hovel in Ann Arbor). Slumgullion (a Gold Rush term for a slurry of rock and mud; extended to an extempore casserole. A version appears in The Dharma Bums): Cube and steam a couple of potatoes until nearly cooked, while frying a few ounces of pork sausage (eggplant or zucchini could substitute; weve been known to use salami). Sautee equal amounts of diced celery, bell pepper and onion in bacon grease or olive oil. When the onions are translucent, add the potatoes and fry until browned. Meanwhile, pull out the sausage and scramble a few eggs in the grease. Layer the potatoes, the eggs, and the sausage in a microwave dish, sprinkle with shredded cheese and nuke until it’s melted.
