Mithi rot(diamond cuts or round cuts) is a deep fried sweet snack which is ideal teatime snack and a couple of them for breakfast with a glass of milk make a good breakfast too. You can store them in an airtight container for a week or so. Here is the recipe; Mithi rot Ingredients: plain flour (maida)-500g semolina-50g sugar-350g khoya/mawa-50g roasted poppy seeds-2tbsp ghee-6tbsp milk-1cup baking soda-1/4tbsp Grated coconut-1cup Saffron/kesar-2-3thread (optional) Rose essence-3-3drops Oil for frying Method: 1.Dry mix the flour, semolina, and sugar.Crumble and add khoya Add the baking soda, ghee,grated coconut and roasted poppy seeds and mix in well. 2.Using milk as needed, make a dough of a hard consistency.while making dough add rose essence. 3.Divide into 2 equal portions and let the dough sit for 1 hour. 4.Sprinkle flour on the rolling board and roll out each portion to 1/2 inch thickness and cut into desired shapes. 5.Deep fry on a medium heat till golden brown. :- You can store them in an airtight container for a week or so.
