Mom’s Tortilla Soup 1 rotisserie chicken cubed up 48 oz of low sodium chicken broth 1 can corn drained 4 cans chile beans 2 cans black beans drained 2 cans fire roasted green chiles ½ to one full block of velveeta cheese (you make the call once it starts to melt) 1 to 2 packages of low sodium taco seasoning (again depends on your taste buds, start with one) 1 to 2 cans Mexican style tomatoes Green onions chopped up for garnish on top of soup Bag of tortilla chips Directions: In a large stock pot pour chicken broth, add diced chicken, all the beans, green chiles, corn, and tomatoes into the pan. Stir, and bring to a medium boil. Once this is at a medium boil add the package of taco seasoning and stir until blended. Next cube up the velveeta cheese and add to the pot, stirring constantly until it has all melted. Continue to cook on low for a little while Once it looks and tastes done, serve into bowls or bread bowls. Crumble some tortilla chips on top with some diced green onions.
