Mongolian Beef and Spring Onion 2 tsp Olive Oil 1 Tblsp Finely chopped Garlic 1 tsp Grated Fresh Ginger 1/2 C Low Sodium Soy sauce 1/2 cup water 3 Tblsp Brown Sugar 1 Lb Beef, sliced 1/4 inch thick (flank steaK) 1/4 c cornstarch plus 1 tblsp 1 bunch green onions, cut in 1 in lengths Vegetable oil for frying Heat Olive oil in a saucepan over medium heat. Stir in the garlic and ginger and cook for about 30 seconds. Pour in the soy sauce, water and brown sugar. Stir for about 4 minutes or until sugar has dissolved and the sauce boils. Remove sauce and set aside. Place the beef into a bowl and sprinkle with cornstarch, stirring to coat evenly. Let rest for a couple of minutes for cornstarch to be absorbed, about 10 minutes. Heat Vegetable oil in wok or deep skillet to 375 degrees. Take beef slices and gently place in hot oil, a few pieces at a time. Turn pieces and cook until the edges become crisp and turn brown. About 2 minutes. Remove beef with tongs from oil and drain on paper towel or strainer. Pour the oil out of skillet and return skillet to medium heat. Place beef in the pan, stir and pour in the reserved sauce. Add 1 tblsp of corn starch and stir until thickened. Add the green onions.
