More and more states and cities have taken the steps necessary to ban commercial food waste from landfills. New York City is the most recent, having just completed a six month program where restaurants volunteered to keep food waste out of landfills, either by donating leftover food or sending the food to a composting facility or anaerobic digester. The program had over 100 restaurants taking part and reportedly diverted more than 2,500 tons of food waste over the course of six months. New York City’s mayor, Michael Bloomberg made a proposal for this in November of 2013 that would affect facilities generating more than one ton of food waste per week. This mainly affects large generators such as hospitals and hotels. New York City is the latest to join several other cities and states that are taking the necessary steps toward decreasing the amount of organic waste that ends up in landfills. The northeastern states of Connecticut, Vermont, Massachusetts, and the western cities of Seattle, San Francisco, and Portland all have banned landfill disposal from large commercial food waste generators. Composting organic waste is becoming a big opportunity to create a useful product and reduce the amount of garbage going into landfills and incinerators.
