More on the healthy eating (mostly cause Eleanor said she likes these posts). So, back when I was pregnant with Anand, I had borderline gestational diabetes -- to be safe, the doctor put me on a carb-restricted diet, with me pricking my finger and checking my blood sugar five times a day. One of the hardest parts was eating out -- five years ago, it was still really difficult to get carb counts on restaurant food. We dont eat out much, but when we did, I ended up defaulting to either straight-up sashimi (no hidden carbs there!) or caesar salad with grilled shrimp or chicken (hold the croutons). I got to like caesar salad, and then I got really really tired of caesar salad. But now enough time has gone by that I like it again. What I tend to do is pull out my grill pan (for the stovetop, v. useful) and grill up a pound of shrimp or a package of chicken breasts (3-5 minutes). Then I have those ready to eat all week -- great in salads, but also in quesadillas, omelettes, etc. I continue startled at how low-calore shrimp are -- only about 8 calories each, so a small salad of romaine lettuce, a T of caesar dressing (I like Marzettis, 44 calories / T), and 8 shrimp is only about 120 calories total. When Im being careful about food, Im usually trying to do 4-6 small meals a day, and this is the perfect size for a small, mid-afternoon meal. Not the best option if youre watching your cholesterol too, but mine is naturally on the low side, so I dont worry about it. More shrimp for me. :-)
