Boiling mushrooms reduces agaritine by 88%, so is the most recommended way of cooking mushrooms. However, unless making mushroom soup, many nutrients will be lost in the boiling process. Another effective method to reduce agaritine is simply to store mushrooms in the refrigerator; to reduce agaritine by 77%, freeze them for 30 days then thaw out and consume raw. It is likely that freezing also increases bioavailability of nutrients as water content expands and breaks up the binding components and fiber to ease digestion. So the take away message: keep your mushrooms cold.
