:::::::::Mutton Qorma;;;;;;;;; Ingredients: Mutton/beef/chicken 1 k.g onion finely (thinly) sliced 250 gms. yoghurt 3/4 cup For Paste: 1/2 tsp shahi zeera, 2 tbsp poppy seeds, 1 tbsp(heaped) grated coconut, 7-8 cashew nuts, 2 tbs chaar maghaz (4 melon seeds) (make a fine paste out of it)keep aside. ghee or oil 1/2 cup (less or more) green cardamoms, nutmeg, mace powder 1/2 tsp ginger paste 2 tsp garlic paste 2 tsp onion paste 1/4 cup red chilli 1 tsp (less or more) kashmiri chilli powder 1 tsp coriander powder 3 tsp salt to taste bay leaves 1-2 cinnamon stick 1 green cardamoms 5-6 black cardamoms 2 cloves 3-4 whole black pepper 5-6 method: heat ghee or oil fry finely sliced onion sprinkle salt (a pinch) fry on medium low heat till the onion is golden brown, take out the onion and leave for few seconds, crush with hands immediately as much as you can. In same oil put bay leaves, cinnamon stick, both green and black cardamoms, cloves, whole black pepper, crackle, add mutton pieces, fry and stir till the mutton water dries up. add garlic paste, ginger paste,fry for few minutes, add onion Paste,stir for 3-4 minutes, add both chillies powder, coriander powder, some salt to taste sprinkle some water and cook till the oil leaves the surface, now add whisked yogurt n cook for another 6-7 minutes, add some more water n let it cook on medium low heat till the meat is 80% done. add fried crushed onion, chaar maghaz etc. paste, nutmeg, mace green cardamoms powder, simmer on low heat till the meat is fully done, garnish with some fried cashew nuts (optional)
