My Chickpea Chick Salad Now this recipe is not exact with measurements. Play with it and make it your own. I cooked an entire bag of chickpeas - the usual soak over night and boil a couple of hours. I portioned some of these out - enough for two servings. The remainder are used for another meal. Mash up the chickpeas and add a pinch of himalayan salt, some black pepper, a sprinkle of chia seeds, chopped organic, raw walnuts, organic cranberries and some finely minced purple onion. In a separate bowl, I added a couple of tablespoons of tahini and a squeeze of some fresh lemon. Mix together. Coat the chickpea mix with the tahini mix. Season to taste. Serve in a pita or on top of a salad. So yummy!!
