My Grandma Lupes Chicken mole recipe, of course it takes my touch...but here it is.. boil chicken, save broth remove chicken and de-bone. Set aside... Mole: 5-7 dried pasilla or ancho chiles, stemmed and seeded, I like anchos, boil until soft...add anchos to blender, 2 corn tortillas cut into pieces, about 2 tablespoons olive oil,1 1/2 medium onions, chopped, a dash of salt, 2 spoon full (I guess teaspoons) cloves garlic, minced, 2 tablespoons smooth peanut butter 1 spoon full dried oregano, One 1/2 disk Mexican chocolate, chopped, such as Ibarra, a dash of red pepper. Blend.. you may have to add more broth.. keep adding broth.. then add to pan, try to remove all sauce from blender. Once in pan, stir with WOOD spoon... add broth until desired thickness.. add chicken...keep stirring. ENJOY!! I eye ball everything.. I dont measure(cause Im good like that..j/k) so before you put in pan, feel free to taste. Add addition flavoring if needed... oregano, onion, salt..etc.
