My biggest fault is not being patient enough with our beer... but not this time. For this beer, I waited almost 6 weeks for it to finish, and its her best IPA yet. 2 weeks in primary, 2 weeks in secondary, (dry hopped heavily at week 3), and cold crashed for another 3 days. Carbed another 3 days and here we are... An amazing IPA with a fresh burst of hops, a good malty body, and a crystal sweet finish. Very clear, and very tasty. Sending this to all our relatives for the holidays. Its called Redemption IPA. It was brewed after our loss at Hop Wars, and she put all she had into it. What an incredible beer. I stand in awe... Tonight, she also made a beef roast, marinated and cooked in this same IPA! Am I lucky or what!?! Cheers!!!
