My favorite Thanksgiving dish, BY FAR, is oyster dressing! Here is my familys recipe that has been passed down for a few generations! ENJOY!!! Preheat oven to 400 deg. Make biscuit dough and roll out thin. (Bisquick Mix dough works) Place on a greased baking sheet and brown both sides in hot oven. Let cool and break up into very small pieces by hand or in food processor. Put in a large dutch oven pot to cook on top of stove. Add one sleeve of saltine crackers,broken into small pieces. Add four slices of toast, crumbled. Heat four cups of chicken broth and stir into bread mixture while on low heat. Add three beaten eggs and 2/3 stick butter. Continue stirring until mixture is free of lumps. Use extra chicken broth if mixture seems too doughy. Add black pepper and your favorite spices, sage,poultry seasoning or herbs. Meanwhile, gently heat one pint (or more if desired) of fresh oysters in their liquid. (Do not overcook) If they’re very large, cut in half. Gently stir oysters into the bread mixture. Pour dressing into large baking pan, greased or baking pans of your choice. Bake at 400 deg. for 20 min. and 450 deg. 25 min. These baking times may vary with different ovens. Make sure dressing is set and not soupy. Serve hot with ladle of turkey gravy.
