My favorite cornbread is Pumpkin Cornbread Pumpkin Cornbread Mix together 1 c flour- I use white whole wheat flour 1 c cornmeal 1 T baking powder ½ t salt ½ to 1 t fresh grated nutmeg (we use teaspoon) ¼ t mace Then add and mix till just blended 2/3 c brown sugar 2 T honey ¼ c canola oil or melted butter- I use oil because my husband always butters his cornbread 2 eggs ¾ c canned pumpkin puree 2/3 c milk- can use buttermilk, I like to use evaporated milk can grate a little more nutmeg on top if desired bake in an 8” square pan, 350 degrees, 40-45 minutes
