My #fitpregnancy lunch: spaghetti squash with sautéed vegetables and marinara sauce. This is actually a great dinner meal, I always take advantage of dinner meals for left over lunches the next day. I pack them in my hubbs lunch pack and send him out to door to hit the pipes for the day. Preheat your oven to 400° Cut the spaghetti squash in half and scrape out the insides just like you would do a pumpkin. Discard the seeds and other innards. Place the spaghetti squash cut side down with a quarter cup of water inside the dish. The water will steam up into the squash making it extra soft. Bake on lower level for 35-40 minutes In a medium-size skillet sauté 2 to 3 of your favorite chopped vegetables of your choice. Today I did a yellow onion, mushrooms, and bell pepper. I sautéed my vegetables with a half a tablespoon of grass fed butter. And 1 tablespoon of low-sodium soy sauce. you can take a mini sauce pan and warm up some marinara sauce if you like. When your spaghetti squash is done take a fort and gently scrape it out. The squash is called the spaghetti squash because its grates out and looks like spaghetti.
