My friend, Elisheva Rogosa, is spearheading a movement to revive ancient biblical wheat, including einkorn and emmer. I have used her emmer and einkorn flours to make breads and they were wonderful. These were the types of breads consumed in ancient Israel, providing me with a taste of Israel’s past. Here is an article describing her efforts. She is working with others to plant grains before the onset of the Shemmitah year on Rosh Hashanah and provide alternatives to modern common wheat.
