My gardens are producing hundreds of pounds of veggies each week now...yesterday I made a huge pan of roasted root veggies, I ended up making a second pan as the first one disappeared before dinner time! To make, cut up root veggies; I used carrots, onions, beets (yes beets, even my kids are every last one) and potatoes then added a few young zucchini. Add a tablespoon of minced garlic, drizzle with olive oil and sprinkle with Mrs. Dash seasoning. Toss and put in a pre-heated oven. Roast on 400, stirring after 10 minutes. Take out when beets are tender...when I put it on the counter to cool, I came back an hour later and there was one carrot left...! I ended up roasting a second, much bigger pan full!!
