My healthy twist on the ever popular Filipino Dish - Pork Adobo! Hubby and kiddos approved👍 Paired with Garlic Fried Rice and threw in some Brussel sprouts in there too. Ingredients: - 2 Tbsp. bacon fat - 4 pounds Boneless Sirloin Pork - 3/4 cup apple cider vinegar - 3/4 cup coconut aminos -1 whole garlic, crushed -1 onion -ginger -1 Tbsp. raw honey -10 black peppercorns -5 bay leaves Directions: 1. Brown Pork in a large pan. 2. In the meantime, heat the bacon fat in a large saute pan over medium high heat. Sautée garlic, onion, ginger 3. Once the pork has browned, remove from pan and set aside. 4. In a large pot combine apple cider vinegar, coconut Aminos, and raw honey. 5. Add the sautéed garlic, onion, ginger with the Pork along with bay leaves and black peppercorn. 6. Cover the pot and let it boil. 7. Simmer on low for about 45 mins or until pork is tender.
