My hens gave me more than the gift of fresh eggs. Having this daily gift is encouraging me to once again cook. Many years ago, I was an excellent cook - then stores like Whole Foods and Fresh Market made it easy to eat healthy without having to cook. Now that I am settled in Sheboygan and have access to organic foods - and will be hibernating for the winter - I am once again learning the art of cooking (having had many failures to start). Today was a triple egg day so I made this dish of veggie hash (potatoes - as true of the hens - are from Lyndale Farms) - thank you Lynda Lambert and Dale Skaggs for more gifts than you realize. btw - it tasted yummy but I couldnt finish it.
