My husband and I own a Turkish restaurant. Lucky for me a lot of their traditional dishes are good for me! This is a picture of PIYAZ or white bean salad. For those of u in a rut or needing to change your menu up-make this! Can be varied to your liking. I use white beans either canned or dry (preferably dry for less sodium and higher nutrition content). You could also use kidney beans, etc.. if using the dry, soak overnight and then in fresh water cook with a pinch of salt until tender. Drain and rinse well. Cut up your favorite veggies. I go for peppers, all colors, tomatoes, red onion and Italian parsley. Add in cooled beans and keep in airtight container in refrigerator. Then when I want, I take out my serving and toss lightly with extra virgin olive oil and vinegar. Last touch, a squeeze of fresh lemon and Mrs. Dash. HIGH IN FIBER AND PROTEIN. Enjoy!
