My natural pest control guy came for his typical 3 or 4 month visit. He also does carpentry stuff for me when necessary. He is a foodie and enjoys a bleu cheese as much as I. I thought I woul show him what I thought was my failed Stilton. I say failed because I over cooked the curd and was not able to butter the outside and I did not use cream with this batch. On the outside it is an ugly looking thing. So I reached for a knife an took a pinch of the inner part that looked like it should be ok, and had him taste. He took the taste ....closed his eyes and enjoyed the moment and was truely impressed as to how I was able to do this. I may not be able to enjoy the whole wheel but ......will certainly enjoy what I can. The old adage prevails again..........Dont judge a book by its cover. :)
