My new fav salad. Ry Roasted cauli or brocoflower with a variety of other veges. Heat oven on fan bake to 170deg. Line a baking dish with baking paper. Dice/chunk cauli, & and any mix of courgettes, red onions, peppers, aubergine, carrots, mushrooms. Sprinkle with herbs, season and bake until cauli toasted and nutty and other veges are soft. Serve drizzled in lemon juice and balsamic vinegar. I served this with some chicken tenderloins. Hight protein and low carb eating😊
