My recipe for Mexican Wedding Cake.... Mexican Wedding Cake Ingredients... 2 cups sugar 2 cups flour 1 tsp. baking soda 1 (20oz.) can crushed pineapple w/juice 1 cup chopped pecans ...optional 1 tsp. vanilla Mix all ingredients and bake @ 350 in greased and floured 13x 9 inch pan for 30 to 40 minutes. Icing 8 oz. softened cream cheese 1 stick margarine, melted 3/4 cups sugar (granulated) 1/2 to 3/4 cup chopped pecans...optional 1 tsp. vanilla Blend icing ingredients and put on cake while warm...refrigerate left over cake...just as good on day 3 as day 1,,if not better......
