My recipe for spinach & artichoke dip 1 Canned artichokes 1 bag Baby spinach 3 Tblsp. Butter 4 cloves minced Garlic 2 Tblsp. Flour Enough Milk Salt & pepper to taste 1 package Cream cheese 1 package Crumbled feta 1/2 cup Grated Parmesan 1/2 cup Grated Pepper Jack Cayenne pepper to taste Pita wedges, tortilla chips, or crackers Make a roux with the butter and flour, cook a bit to remove the flour taste. In another pan sauté the garlic in a tablespoon of butter. Add chopped artichoke hearts and let them brown a bit, but, be careful not to burn the butter. Add spinach, let wilt, then add the roux, milk, and all the cheeses. Let it melt and blend, if its too thick, add more milk, but be careful, for a roux to thicken it must come to a slight boil. Add the seasonings to taste. I add a splash of dry white wine or dry sherry to finish. ** I also use Goya Adobe seasoning to taste, but, thats me, use your own touch. ** Another addition(s) could be cheddar cheese, sundried tomatoes, jalapeños, ripe tomatoes, bacon or pancetta bits.. Not all at the same time, choose your favorite.
