NATIONAL TACO DAY Celebrated each year across the United States, it is National Taco Day. Tacos are loved and eaten by millions, each day, in either hard shells or soft shells, with a variety of different fillings. The history of the taco predates the arrival of Europeans in Mexico. There is actual anthropological evidence that the native people living in the lake region of the Valley of Mexico traditionally ate tacos that were filled with small fish. Bernal Diaz del Castillo documented, at the time of the Spanish conquistadors, the first taco feast enjoyed by Europeans, which was a meal that was arranged by Hernan Cortes for his captains in Coyoacan. It is unclear as to why the Spanish used their word “taco” to describe this native food. There are many traditional varieties of tacos.
